Rhubarb Hibiscus Iced Tea
Tart and sweet with hints of mint.
1 cup fresh chopped rhubarb
1 tbsp hibiscus tea
8 cups water
2 tbsp honey
Zest of one lemon
1/4 cup fresh mint leaves
Bring rhubarb, hibiscus, lemon zest, and honey to a boil in 8 cups of water.
Let simmer for 15 minutes, then allow to cool completely
In a large pitcher add fresh mint leaves and lemon slices.
Strain rhubarb juice into the pitcher and stir
Let sit for at least half an hour to allow flavours to infuse.
