Chai Spiced Crabapple Jelly
Spice up your jelly with the addition of some traditional masala chai spices.
Ingredients
4 cups crabapples
3 cups sugar
2 tbsp powdered pectin
1 tbsp lemon juice
3 TBSP of Tickled Tea Chai Five OR

1 tbsp black tea (1-2 bags)

1 tsp ginger

1 tsp cinnamon

1 tsp ginger

1 tsp cardamom

½ tsp black pepper
Directions
1. Core the crabapples and place in the bottom of a deep pot
2. Place black tea, cinnamon, ginger, cardamom, pepper and cloves into a fillable tea bag and place on top of apples.
3. Cover apples with just enough water to cover them (so that they just float)
4. Bring to a boil, then simmer for 30 minutes
5. Pour fruit, water and tea bag through a sieve and collect the juice in a clean sauce pan
6. Stir powdered pectin and lemon juice into 2 cups of reserved juice. Bring to a boil and simmer for 5 minutes.
7. Stir in sugar and bring to a boil for one minute (careful not to boil over)
8. Remove from heat and skim foam from the top.
9. Pour juice into sterilized jars and seal.
*Yields 2 pints
